Here’s all you need to know about Passover—– in two words:
Matzo Roca
4 whole matzos
1 stick butter
1 cup brown sugar
16 oz. chocolate chips
½ cup chopped walnuts (optional)
Preheat oven to 350.
Lay matzo in a flat jelly roll pan or on cookie sheet that has been greased well.
You can break the matzos to fit into the pan.
Melt butter and add brown sugar and stir till bubbly.
Pour over matzo and spread lightly with a spatula.
Bake at 350 for 15-20 minutes.
Take out of oven and turn oven off.
Sprinkle matzo with chocolate chips and return to oven for 1-2 minutes.
It will melt quickly.
Remove from oven and spread melted chocolate with spatula.
Sprinkle with chopped nuts if you want.
Chill in refrigerator. Break up into pieces when cold.
Can be made in advance ; put into Ziplock bags; and keep in refrigerator. (Not that it keeps for very long around me….)

I love your blog, and read it religiously. Can’t believe it took the matzah almond roca for me to delurk. I’ve made this for years, and it’s always a hit at every seder I’ve been to. I can’t imagine a Passover without it!
Of course you need your chocolate fix even on Passover.
Matzah Brei is my favorite Darryl, especially the way Grandma Bertha made it..yummy, but this is a very very strong contender for what you can do with Matzah any time of year! Happy holiday and much warmth to your family!

Actually Alli loves matzo brei and I used to make it all the time; somehow I never thought about eating matzoh roca anytime except Passover. Although now that you suggested it…..

We are passing over passover this year with a cheap imitation quickie seder in FL. But I’m thinking we will have to make time for this.
Do you put an orange on your seder plate?
I make this every year with different toppings- shredded coconut, nuts, white chocolate, peanut butter chips… it is my most requested dessert for every holiday.

Since you’re in Florida, an orange somehow makes sense— I grew up there, but never heard of one on a seder plate.
I use pecans…for that pecan pie taste. Happy Passover…next year, etc etc
